Pulled Pork with Bacon and Cranberries #Recipe

Prep time: 1/2 hour - tops
Cook time: 10 Hours
Total time: 10 1/2 Hours
  • 6 pounds Boneless Pork
  • 2 cups Vegetable Broth
  • 1 cup Cranberries
  • 1/2 pound Bacon
  • 1 cup Red Wine or Beer
  • Pepper to taste
  • Bay leaves to taste
  • 1 Onion
Cut the bacon in small bits and mix all the ingredients (except the pork) in a bowl. Place the pork in a Roaster Pan and pour the ingredients over. Place it in an oven for 10 (ten) hours at approx. 220°F. When time is up, carefully lift the pork into a bowl/plate and pour the liquid (including onions, bacon and cranberries) into a pot and reduce it to approx. half the amount. Maybe add a little cream to thicken it. The sauce works great as sauce for a burger. (My guests usually ends up eating the sauce alone with the homemade burger buns)
